This recipe was created in a vicious hurry; guests were on their way and we hadn’t even planned the menu yet. Fitting flavors together on the fly, this is what we came up with. Surprisingly enough, everyone loved it.
Asparagus Melt

1 lb. of asparagus
3 slices of bacon
1 cup of Monterrey jack cheese
1 pat of butter
minced garlic
ground pepper
Preheat oven to 375.
Cut the slices of bacon into smaller squares, and adding them to a pan on medium heat. Stir occasionally until the bacon has released most of its fat. Wash the asparagus and cut into 1.5″ long sections. Add to pan and stir occasionally until it feels cooked but still somewhat firm.

Cut pat of butter into thirds, then scatter pieces on the bottom of a medium sized baking dish. Sprinkle in minced garlic to taste, the more the better. Spread the bacon asparagus mixture evenly in pan, then cover with cheese. Place in oven until cheese has browned to crunchiness. Serves 2-4, depending on hunger.
